Red Bean Pancakes
  Ingredients ( 5 Total )
     
  • 2 cups of white flour
  • 4 tsp sugar
  • 1 cup water
  • 1 egg white, beaten until fluffy
  • 6 oz can azuki beans (red beans), mashed and mixed with enough sugar to form a thick sweet paste
  • vegetable oil 
     
 
 
Dorayaki is a traditional treat that's like a pancake sandwich with redbean filling. It's wonderfully sweet and great as a dessert or snack.
 
 
 

These red bean pancakes make a great dessert and are also perfect for on-the-go snacking.  Dora-yaki can be served warm or at room temperature and go wonderfully with tea.

 
  Step by Step Preparation  
 
  1. Sift flour into a bowl.  Add sugar and water, stirring to make a batter. Then fold in egg whites.
  2. Heat a little oil in a nonstick pan.  Put a 2 tablespoon scoop of batter onto hot pan and let batter spread.  When bubbles appear on the surface, flip and fry other side for 30 seconds or so.  Remove from pan.  Keep cooking pancakes until batter is gone. 
  3. Spread red bean paste onto a pancake and top it with another pancake, forming a sandwich.
  4. Serve warm or at room temperature.
