Rice cakes are a staple dessert in many Asian cultures. The Korean version is known as tteok and is available in elaborate versions for big celebrations or plainer versions for home enjoyment. Not only are there many varieties, but tteok is also prepared in a few different ways. Injeolmi is traditionally made by steaming and pounding with special utensils, but in this recipe the rice cake is baked and a lot less time consuming.
