White Fungus in Sweet Soup
  Ingredients ( 4 Total )
  Serves 6  
  • 3 Tbsp white fungus
  • 2 cups water
  • 3/4 cup rock sugar or white sugar
  • 1 can lychees or longans
  • 10 ice cubes, optional
 
 
White fungus, or snow fungus, in sweet soup may not sound very appetizing, but it's worth a try!
 
 
 

This dessert can actually be found in Chinese restaurants as well.  It's easy to make and very different from Western desserts.  Snow fungus is tasteless on its own, but its jelly-like texture and the addition of the other sweet ingredients make this a fun dessert. 

 
  Step by Step Preparation  
 
  1. Wash white fungus and soak in hot water for 10 minutes or until it softens and swells.  Drain. 
  2. Combine water, fungus and sugar in a saucepan.  Bring to a boil, stirring until sugar dissolves.  Cover and simmer for 10 minutes.  Let cool.
  3. When serving, add fruits and their syrup in a serving bowl.  Add ice cubes if serving as a cold dessert.  May also serve warm.
